Single Serve Protein "Brookies"
So Not exactly sure what to call these, went with protein brookies! they look like cookies but they are so fluffy and fudgy... they are brownies too! Single Serve, So easy, Moist and fudgy! High Protein and the perfect snack for when you just wanna down a truck load of cookies... or brownies!
PLEASE DO NOTE!: i give full credit to @peanutbutter_nlashes on instagram! shes the whole reason why i have even started baking with pumpkin! If you have an instagram, no joke follow her! shes one of the most inspiring and strongest people ive ever seen! and yes her recipes aere rediculous good!
What you will need...
-1 scoop protein { i used quest peanut butter! }
-40g egg whites
-80g pumpkin puree
-3 tbsp cocoa powder
-2 tbsp pb2 { you can use regular flour, i've done this with oat flour before! }
-1 tsp baking powder
-~1/4 cup milk { this is depending on what protein you use, if its your first time making them just take half a cup of milk and slowly add it in while stirring to get your desired texture }
Optional Additions
-stevia/syrups/chocolate chips/other add-ins to make your day! i love using Jordans skinny syrups!
-8g jello pudding mix can be added or swapped for the cocoa for a non-chocolate version!
first mix everything together BUT the milk... once everything is fairly mixed beggin to add the milk slowly while mixing until you get your desired texture!

that looks about it! not to sticky - not to runny! side note... i cannot describe how much self control i need to not eat the batter...
anyways! i like making mine into 5 giant ones! there about the size of those vita top things but way more fudgy and fluffy! you can do 8-10 mini if youd like! once there all layed out on a bake sheet... bake at 400 degrees for around 15 min... then lower the temperature to 300 for a good 5 min! key to the moist middle! let them cool for around 10 more and they should pop right off!
I've made these so many times for before work and yes they teaste delicious warm AND cold! best kind of brookies! haha well i hope you guys enjoy!
